Stewed Winter Melon with Peanuts

Summary:

Stewed winter melon with peanuts is a light, soothing vegetarian dish featuring soft winter melon and tender peanuts with a gentle, nourishing flavor.

Ingredients:

Winter melon 400g (peeled and cubed)

Peanuts 80g (raw or soaked)

Ginger 3 slices

Salt to taste

White pepper powder a pinch

Soy sauce 1 tablespoon (optional)

Water 600ml

Vegetable oil appropriate amount

Instructions:

1. Prepare the Ingredients:

Cut the winter melon into cubes. Soak the peanuts for 1 hour to soften. Slice the ginger.

2. Sauté the Ginger:

Heat a small amount of vegetable oil in a pot and sauté the ginger slices over low heat until fragrant.

3. Add Winter Melon and Peanuts:

Add the winter melon and stir briefly. Add the soaked peanuts and mix well.

4. Add Water and Simmer:

Pour in water. Add soy sauce if desired. Simmer over medium heat for 20–25 minutes until the melon turns translucent and the peanuts become tender.

5. Season:

Add salt and white pepper powder. Cook for another 2 minutes to blend the flavors.

6. Serve and Enjoy:

The dish is soft, delicate, and soothing—perfect for daily nourishment.
