Spicy Stir-Fried Lotus Root Cubes

Summary:

Spicy stir-fried lotus root cubes are a crunchy and flavorful vegetarian dish featuring a bright combination of heat and fragrance.

Ingredients:

Lotus root 300g (diced)

Dried red chilies 4 (cut into sections)

Sichuan peppercorns 1 teaspoon

Ginger 3 slices (shredded)

Soy sauce 1 tablespoon

Vinegar 1 tablespoon

Salt to taste

White sesame seeds appropriate amount

Vegetable oil appropriate amount

Instructions:

1. Prepare the Lotus Root:

Peel and dice the lotus root. Soak in water to prevent discoloration, then blanch for 2 minutes and drain.

2. Toast the Spices:

Heat vegetable oil in a pan and sauté the Sichuan peppercorns and dried chilies over low heat until fragrant.

3. Add Ginger and Lotus Root:

Add shredded ginger and stir briefly, then add the blanched lotus root and stir-fry well.

4. Season the Dish:

Add soy sauce, vinegar, and salt. Stir-fry quickly over high heat so the lotus root absorbs the flavor.

5. Add Sesame Seeds:

Sprinkle white sesame seeds before turning off the heat and mix lightly.

6. Serve and Enjoy:

Serve hot or cold—the lotus root remains crisp with a pleasant spicy and numbing aroma.
