Pumpkin Pancakes

Summary:

Pumpkin pancakes are soft and sweet vegetarian treats made from pumpkin and glutinous rice flour, offering a naturally rich and comforting flavor.

Ingredients:

Pumpkin 300g (peeled and cubed)

Glutinous rice flour 200g

White sugar 2 tablespoons (adjust to taste)

Vegetable oil appropriate amount (for pan-frying)

Water a small amount (as needed)

Instructions:

1. Prepare the Pumpkin:

Steam the pumpkin cubes until soft, then mash into a smooth puree.

2. Make the Dough:

Add white sugar and glutinous rice flour to the pumpkin puree. Knead into a soft, non-sticky dough, adding a little water if needed.

3. Shape the Pancakes:

Divide the dough into small portions, roll into balls, and gently flatten into pancakes.

4. Heat the Pan:

Heat vegetable oil in a non-stick pan over low heat.

5. Pan-Fry the Pancakes:

Place the pancakes into the pan and cook slowly until both sides are golden and cooked through.

6. Serve and Enjoy:

Remove from the pan and serve warm. The pancakes are crispy outside and soft inside.
