Stir-Fried Enoki Mushrooms with Peppers

Summary:

Stir-fried enoki mushrooms with peppers is a light, slightly spicy vegetarian dish with a tender texture and bright flavor.

Ingredients:

Enoki mushrooms 200g (trimmed and rinsed)

Green bell pepper 1 (shredded)

Red bell pepper half (shredded, optional)

Ginger 3 slices (shredded)

Soy sauce 1 tablespoon

Salt to taste

White pepper powder a pinch

Vegetable oil appropriate amount

Instructions:

1. Prepare the Ingredients:

Rinse and trim the enoki mushrooms, separating them into small clusters. Shred the green and red peppers, and shred the ginger.

2. Sauté the Ginger:

Heat vegetable oil in a pan and stir-fry the shredded ginger until fragrant.

3. Stir-Fry the Enoki:

Add the enoki mushrooms and stir-fry over high heat for about 2 minutes until softened.

4. Add the Peppers:

Add the green and red bell peppers and continue stir-frying evenly.

5. Season the Dish:

Add soy sauce, salt, and white pepper powder. Stir quickly to blend flavors.

6. Serve and Enjoy:

Once ingredients are just cooked and crisp-tender, remove from heat and serve hot.
