Luohan Vegetarian Soup

Summary:

Luohan vegetarian soup is a light and nutritious traditional broth combining various vegetables and tofu products, offering a soothing and cleansing effect.

Ingredients:

Cabbage 150g (cut into sections)

Carrot half (sliced)

Shiitake mushrooms 4 (soaked and sliced)

Wood ear fungus 10g (soaked and shredded)

Dried tofu sticks 50g (soaked and chopped)

White radish 100g (cubed)

Lotus root 100g (sliced)

Red dates 5 (pitted)

Goji berries appropriate amount

Ginger 3 slices

Salt to taste

White pepper powder a pinch

Water 1200ml

Instructions:

1.Prepare the Ingredients:

Wash and cut all ingredients. Soak and chop the dried tofu sticks. Rehydrate the mushrooms and wood ear fungus.

2.Start the Broth:

In a pot, bring water and ginger slices to a boil. Add white radish, lotus root, shiitake mushrooms, and red dates.

3.Simmer the Base:

Lower to medium heat and simmer for 15 minutes. Then add carrot, tofu sticks, and wood ear fungus. Continue to simmer for 10 minutes.

4.Add Cabbage:

Add the cabbage and cook for 5 minutes until tender. Stir in goji berries and cook for 1 more minute.

5.Season and Serve:

Add salt and white pepper to taste. Stir well, turn off the heat, and serve hot.
