Purple Sweet Potato Millet Rice
Summary:

Ingredients:
Purple sweet potato 200g (peeled and cut into small cubes)
Millet 100g (rinsed and soaked for 30 minutes)
Water 500ml (adjust as needed for desired texture)
Instructions:
1. Prepare Ingredients:
Peel and dice the purple sweet potato into small cubes. Rinse the millet thoroughly and soak it for 30 minutes before draining.
2. Boil the Millet:
Add millet and water to a pot, bring to a boil over high heat, then reduce to low heat and simmer for about 10 minutes.
3. Add the Purple Sweet Potato:
Add the diced purple sweet potato to the pot and continue simmering for another 10-15 minutes, stirring occasionally to prevent sticking.
4. Simmer Until Thickened:
Let the mixture cook until the millet is soft and the sweet potatoes are tender. Once the liquid is reduced to the desired consistency, turn off the heat and let it sit for 5 minutes.
5. Serve and Enjoy:
Transfer the cooked millet and purple sweet potato mixture into a bowl and serve warm. It is naturally sweet, soft, and perfect as a healthy breakfast or side dish.
