Green Pepper Rolls with Enoki Mushrooms

Summary:

This is a simple and healthy vegan dish where enoki mushrooms are wrapped in crisp green peppers, creating a juicy, tender, and flavorful bite. It works well as a light appetizer or side dish.

Ingredients:

Green peppers 2 (choose larger ones, cut into wide strips)

Enoki mushrooms 150g (trimmed and washed)

Light soy sauce 1 tablespoon

Vegetarian oyster sauce 1 tablespoon (optional)

Salt 1/2 teaspoon

White pepper powder to taste (optional)

Vegetable oil 1 tablespoon

Water as needed

Instructions:

1. Prepare Ingredients:
Wash the green peppers, remove seeds, and cut into rectangular strips. Trim the roots of the enoki mushrooms, wash, and drain well.

2. Blanch Enoki Mushrooms (Optional):
Bring water to a boil, blanch the enoki mushrooms for 10 seconds, then drain to remove any raw taste while preserving their texture.

3. Wrap the Mushrooms:
Place a small portion of enoki mushrooms at one end of a green pepper strip, roll it up, and secure with a toothpick.

4. Pan-sear the Wraps:
Heat vegetable oil in a pan, place the wrapped green peppers seam-side down, and pan-fry until the green peppers soften and develop a slight golden color.

5. Season and Simmer:
Add light soy sauce, vegetarian oyster sauce (optional), salt, and a little water. Stir well, cover, and let it simmer over low heat for 1-2 minutes for enhanced flavor.

6. Serve and Enjoy:
Remove the toothpicks, sprinkle with white pepper powder (optional), and serve hot. Enjoy the tender and refreshing taste with layers of textures.
