Braised Peanuts with Carrots

Summary:

This is a soft, naturally sweet vegan braised dish where the richness of peanuts and the sweetness of carrots combine to create a nutritious and simple meal, perfect for daily health-conscious eating.

Ingredients:

Raw peanuts 100g (soaked for 2 hours)

Carrot 200g (cut into chunks)

Goji berries 1 tablespoon (optional)

Vegetable broth 500ml (made from kombu, mushrooms, etc.)

Salt 1/2 teaspoon

Light soy sauce 1 tablespoon (optional)

White pepper powder to taste (optional)

Vegetable oil 1 teaspoon

Water as needed

Instructions:

1. Prepare Ingredients:
Soak the raw peanuts for 2 hours. Wash and peel the carrots, then cut them into chunks. Rinse the goji berries and set aside.

2. Sauté the Ingredients (Optional):
Heat vegetable oil in a pan, then lightly stir-fry the carrots and peanuts for 1 minute to enhance their aroma.

3. Simmer the Peanuts and Carrots:
Pour in the vegetable broth or water, add the peanuts and carrots, bring to a boil, then reduce to low heat and simmer for 30-40 minutes until the peanuts are soft and the carrots are well absorbed with flavor.

4. Seasoning:
Add salt, light soy sauce (optional), and white pepper powder (optional), stirring gently. Simmer for another 5 minutes to blend the flavors.

5. Add Goji Berries:
Finally, add the goji berries and simmer for another 2 minutes before turning off the heat, allowing the soup to develop a naturally sweet and mild taste.

6. Serve and Enjoy:
Transfer the braised peanuts and carrots into a bowl and serve warm. The dish is tender, fragrant, and a nourishing vegan stew.
