Pumpkin Glutinous Rice Rolls

Summary:

This is a soft and chewy vegan dessert or snack, where the natural sweetness of pumpkin blends perfectly with the smooth texture of glutinous rice, making it a delicious and nutritious treat.

Ingredients:

Pumpkin 200g (peeled and diced)

Glutinous rice flour 150g

Sweet red bean paste 100g (optional)

Sugar 1 tablespoon (optional)

Coconut milk 50ml (optional)

Toasted white sesame seeds as needed (optional, for garnish)

Vegetable oil 1 teaspoon (for anti-sticking)

Instructions:

1. Steam the Pumpkin:
Peel and dice the pumpkin, then steam for 10-15 minutes until soft. Mash it into a smooth pumpkin puree.

2. Make the Glutinous Rice Dough:
In a mixing bowl, combine the pumpkin puree with glutinous rice flour, sugar (optional), and coconut milk (optional). Mix well and knead into a smooth, soft dough.

3. Flatten and Fill (Optional):
Roll out the dough into a rectangular thin sheet and spread a layer of sweet red bean paste in the center (optional).

4. Roll into a Log:
Gently roll up the dough into a log shape, sealing the edges lightly to keep it intact.

5. Cut and Steam:
Slice the rolled dough into even small sections, place them in a steamer lined with parchment paper, and steam for about 15 minutes until the rolls are soft and chewy.

6. Garnish and Serve:
Once done, let them cool slightly, sprinkle with toasted white sesame seeds (optional), and enjoy their naturally sweet, chewy texture.
