Stir-Fried Celery with Cashews

Summary:

This is a light and nutritious vegan stir-fry dish, combining the crunchiness of cashews with the fresh sweetness of celery, making it a simple yet flavorful plant-based meal.

Ingredients:

Celery 200g (trimmed and sliced diagonally)

Roasted cashews 50g

Red bell pepper 50g (sliced, optional)

Salt 1/2 teaspoon

Light soy sauce 1 tablespoon

White pepper powder to taste (optional)

Vegetable oil 1 tablespoon

Water 2 tablespoons

Instructions:

1. Prepare Ingredients:
Wash and trim the celery, then slice it diagonally. Slice the red bell pepper (if using) and set aside the cashews.

2. Blanch the Celery (Optional):
Bring water to a boil, add a pinch of salt, and blanch the celery for 10 seconds. Drain and rinse under cold water to retain its bright green color and crisp texture.

3. Heat the Pan:
Add vegetable oil to a pan and heat over medium heat.

4. Stir-Fry the Celery:
Add the celery and stir-fry for about 30 seconds, then add the red bell pepper and stir-fry for another 10 seconds.

5. Season the Dish:
Add salt, light soy sauce, and white pepper powder (optional), then pour in a little water and stir-fry evenly.

6. Add the Cashews:
Finally, add the roasted cashews and toss everything together briefly before turning off the heat.

7. Serve and Enjoy:
Transfer to a plate and serve immediately. The dish is crisp, aromatic, and a deliciously healthy vegan stir-fry.
