Stir-Fried Asparagus Lettuce and Chinese Yam

Summary:

This is a light, refreshing, and nutritious vegan stir-fry where crisp asparagus lettuce meets delicate Chinese yam, creating a simple yet flavorful dish perfect for a healthy meal.

Ingredients:

Asparagus lettuce 200g (peeled and sliced or julienned)

Chinese yam 150g (peeled and sliced)

Red bell pepper 50g (sliced, optional)

Light soy sauce 1 tablespoon

Salt 1/2 teaspoon

White pepper powder to taste (optional)

Five-spice powder 1/2 teaspoon (optional)

Vegetable oil 1 tablespoon

Water 2 tablespoons

Instructions:

1. Prepare the Ingredients:
Peel and slice or julienne the asparagus lettuce. Peel and slice the Chinese yam (wear gloves to avoid irritation). Slice the red bell pepper if using.

2. Blanch the Chinese Yam (Optional):
Bring water to a boil, add a pinch of salt, and blanch the Chinese yam for 30 seconds. Drain well to remove excess stickiness while maintaining a crisp texture.

3. Heat the Pan:
Heat vegetable oil in a pan over medium heat, add the Chinese yam slices, and stir-fry for 1 minute until slightly softened.

4. Add the Asparagus Lettuce:
Add the sliced or julienned asparagus lettuce, stir-frying for 30 seconds to ensure even cooking while maintaining crispness.

5. Season the Dish:
Add light soy sauce, salt, white pepper powder (optional), and five-spice powder (optional). Stir well to coat the ingredients evenly.

6. Simmer for Flavor:
Pour in 2 tablespoons of water, cover, and let simmer for 1 minute to enhance the flavors.

7. Serve and Enjoy:
Transfer to a serving plate and enjoy immediately. The asparagus lettuce remains crisp, and the Chinese yam is soft yet firm, creating a delicate, refreshing taste.
