Curry Cauliflower

Summary:

Curry Cauliflower is a flavorful vegetarian dish that blends the rich aroma of curry with the crisp sweetness of cauliflower, making it both nutritious and delicious.

Ingredients:

Cauliflower 300g (cut into small florets)

Potato 1 (peeled and cubed)

Carrot half (sliced)

Green bell pepper half (chopped, optional)

Coconut milk 200ml

Curry powder 1 tablespoon

Ginger 3 slices

Soy sauce 1 tablespoon

Salt to taste

Water 100ml

Vegetable oil appropriate amount

Instructions:

1. Blanch the Cauliflower:

Boil water in a pot, add the cauliflower, and blanch for one minute. Drain and set aside.

2. Sauté the Ingredients:

Heat a pan, add vegetable oil, and stir-fry the ginger slices until fragrant. Add the potato and carrot, and stir-fry for two minutes.

3. Add Curry Powder:

Sprinkle in the curry powder and stir well to coat the ingredients evenly with its aroma.

4. Simmer the Ingredients:

Pour in water, soy sauce, and salt. Simmer over medium heat for five minutes until the potatoes become tender.

5. Add Cauliflower and Coconut Milk:

Add the cauliflower and coconut milk, stirring well. Let it cook on low heat for another three minutes to absorb the curry flavors.

6. Add Green Bell Pepper:

Finally, add the green bell pepper and stir-fry for one minute until slightly softened. Adjust seasoning and turn off the heat.

7. Serve and Enjoy:

Serve hot, paired with rice or steamed bread, and enjoy the rich curry flavors.
