Salt and Pepper Potato Rolls

Summary:

This is a crispy-on-the-outside, soft-on-the-inside vegan snack, where seasoned mashed potatoes are rolled, fried to golden perfection, and sprinkled with salt and pepper for an aromatic and flavorful bite.

Ingredients:

Potatoes 2 (about 300g, peeled and chopped)

Glutinous rice flour 50g (for extra stickiness)

Cornstarch 20g (for crispiness)

Salt 1/2 teaspoon

White pepper powder 1/2 teaspoon

Salt and pepper seasoning 1 teaspoon

Red chili powder 1/2 teaspoon (optional)

Vegetable oil as needed (for frying)

Instructions:

1. Boil the Potatoes:
Peel and chop the potatoes, then boil them in water for about 15 minutes until fork-tender. Drain well.

2. Mash the Potatoes:
Place the boiled potatoes in a bowl and mash them into a smooth paste using a fork or potato masher.

3. Prepare the Dough:
Add glutinous rice flour, cornstarch, salt, and white pepper powder to the mashed potatoes, mixing well to form a smooth dough.

4. Shape the Rolls:
Take a portion of the dough, roll it into a long strip, then gently shape it into a roll and press it to set.

5. Fry the Potato Rolls:
Heat vegetable oil in a pan to about 170°C. Fry the potato rolls over medium heat for about 3-5 minutes until golden and crispy. Remove and drain excess oil.

6. Season with Salt and Pepper:
While still hot, sprinkle the fried potato rolls with salt and pepper seasoning and red chili powder (optional). Toss gently to coat evenly.

7. Serve and Enjoy:
Transfer to a plate and serve immediately. The crispy exterior and fluffy interior make it a delicious vegan snack or side dish.
