Three-Mushroom Vegetable Soup

Summary:

Three-mushroom vegetable soup is a light and comforting vegetarian broth made with assorted mushrooms and vegetables, offering a naturally savory flavor.

Ingredients:

Shiitake mushrooms 3 (soaked and sliced)

Oyster mushrooms 100g (torn into pieces)

Enoki mushrooms 100g (trimmed and cleaned)

Carrot half (sliced)

Goji berries appropriate amount

Ginger 3 slices

Salt to taste

White pepper powder a pinch

Water 1000ml

Instructions:

1. Prepare the Ingredients:

Soak and slice the shiitake mushrooms. Tear the oyster mushrooms into small pieces. Trim and rinse the enoki mushrooms. Slice the carrot and ginger.

2. Start the Broth:

Add water and ginger slices to a pot and bring to a boil.

3. Add the Mushrooms:

Add shiitake, oyster, and enoki mushrooms. Simmer over medium heat for 10 minutes to release flavor.

4. Add the Vegetables:

Add the carrot slices and continue simmering for 5 minutes.

5. Season the Soup:

Add salt, white pepper powder, and goji berries. Stir gently and cook for 1 more minute.

6. Serve and Enjoy:

Turn off the heat and ladle the soup into bowls. Serve warm for a soothing, savory experience.
