Braised Hericium Mushrooms (English Version)

Summary:

Braised Hericium Mushrooms is a tender and flavorful vegetarian dish that absorbs the rich sauce, making it both nutritious and delicious.

Ingredients:

Hericium mushrooms 200g (soaked if dried)

Carrot half (sliced)

Green bell pepper half (chopped, optional)

Ginger 3 slices

Soy sauce 2 tablespoons

Vegetarian oyster sauce 1 tablespoon

Salt to taste

White pepper powder a pinch

Water 300ml

Vegetable oil appropriate amount

Starch 1 tablespoon (mixed with water for slurry)

Instructions:

1. Prepare the Hericium Mushrooms:

If using dried Hericium mushrooms, soak them in water for four hours until fully softened, then squeeze out excess water and tear into small pieces.

2. Blanch the Mushrooms:

Boil water in a pot, add the mushrooms, and blanch for two minutes to remove impurities and any bitterness. Drain and set aside.

3. Sauté the Ingredients:

Heat a pan with vegetable oil, add ginger slices, and stir-fry until fragrant. Add the carrot slices and stir-fry for one minute.

4. Braise the Mushrooms:

Add the Hericium mushrooms and stir-fry. Pour in soy sauce, vegetarian oyster sauce, salt, and white pepper powder. Mix well.

5. Simmer to Absorb Flavor:

Pour in water, cover with a lid, and let it simmer on low heat for ten minutes to allow the mushrooms to absorb the sauce’s flavor.

6. Thicken the Sauce:

Add the starch slurry and stir gently until the sauce thickens.

7. Serve and Enjoy:

Finally, add the green bell pepper and stir well. Adjust the seasoning if needed, then turn off the heat and serve hot.
