Stir-Fried Mushrooms with Green Peas

Summary:

This is a light, nutritious, and flavorful vegan stir-fry dish that pairs the umami taste of mushrooms with the natural sweetness of green peas, creating a refreshing and delicious meal.

Ingredients:

Fresh shiitake mushrooms 100g (sliced)

King oyster mushrooms 100g (diced)

Green peas 150g (fresh or frozen)

Red bell pepper 50g (diced, optional)

Salt 1/2 teaspoon

Light soy sauce 1 tablespoon

Vegetarian oyster sauce 1 tablespoon (optional)

White pepper powder to taste (optional)

Vegetable oil 1 tablespoon

Water 2 tablespoons

Instructions:

1. Prepare Ingredients:
Slice the shiitake mushrooms, dice the king oyster mushrooms, and chop the red bell pepper (if using). Wash the green peas and set aside.

2. Blanch the Green Peas (Optional):
Bring a pot of water to a boil, blanch the green peas for 30 seconds, then drain to retain their bright green color and crisp texture.

3. Heat the Pan:
Heat vegetable oil in a pan over medium heat. Add the king oyster mushrooms and shiitake mushrooms, stir-frying for 1-2 minutes until softened and fragrant.

4. Add Green Peas and Red Bell Pepper:
Toss in the green peas and diced red bell pepper, stirring for another 30 seconds to ensure even cooking.

5. Season the Dish:
Add salt, light soy sauce, vegetarian oyster sauce (optional), and white pepper powder (optional). Stir well, then pour in 2 tablespoons of water and let it simmer over low heat for 1 minute to blend the flavors.

6. Serve and Enjoy:
Transfer to a serving plate and enjoy immediately. The dish is rich in umami, naturally sweet, and packed with nutrients.
