Wild Mushroom Hot Pot

Summary:

Wild mushroom hot pot is a fragrant and nutritious vegetarian stew that blends various mushrooms into a rich, clear, and savory broth.

Ingredients:

Tea tree mushrooms 50g (soaked)

Shiitake mushrooms 4 (soaked and sliced)

Hericium (lion’s mane) mushrooms 50g (soaked and torn)

Oyster mushrooms 100g (torn into small pieces)

White beech mushrooms 100g (trimmed and washed)

Carrot half (sliced)

Lotus root 100g (sliced)

Red dates 4 (pitted)

Goji berries appropriate amount (soaked briefly)

Ginger 3 slices

Salt to taste

White pepper powder a pinch

Water 1200ml

Instructions:

1.Prepare the Ingredients:

Soak and clean all dried mushrooms. Slice the carrot and lotus root. Pit the red dates, soak the goji berries, and shred the ginger.

2.Start the Broth:

Add water and ginger slices to a pot. Bring to a boil, then add lotus root, carrot, and red dates.

3.Add the Mushrooms:

Reduce to medium heat and add all the mushrooms. Simmer for 20 minutes to extract the full flavor.

4.Finish and Season:

Add the goji berries and simmer for another 3 minutes. Season with salt and white pepper.

5.Serve and Enjoy:

Ladle the hot mushroom broth into a clay pot or bowl. Serve warm for a nourishing and aromatic meal.
