Sweet Sticky Rice Dumplings with Raisins

Summary:

This is a soft and fragrant vegan sticky rice dumpling where the natural sweetness of raisins blends with glutinous rice, creating a deliciously light yet satisfying traditional treat.

Ingredients:

Glutinous rice 500g (soaked for at least 4 hours or overnight)

Raisins 100g (washed and drained)

Bamboo leaves 20 pieces (soaked in water to soften)

Brown sugar 3 tablespoons (optional)

Vegetable oil 1 tablespoon (optional, for better texture)

Salt 1/4 teaspoon (optional, to balance sweetness)

Water as needed (for boiling)

Instructions:

1. Prepare the Bamboo Leaves:
Soak the bamboo leaves in warm water for 2 hours until soft, then rinse thoroughly and drain.

2. Soak the Glutinous Rice:
Rinse the glutinous rice and soak it for at least 4 hours or overnight to ensure better cooking results.

3. Mix the Rice Filling:
Drain the soaked rice and mix it with raisins, brown sugar (optional), vegetable oil (optional), and a pinch of salt (optional) for enhanced flavor.

4. Wrap the Dumplings:
Layer two bamboo leaves together, fold into a cone shape, fill with the rice mixture, press gently, then fold the leaves over to seal. Tie securely with kitchen twine.

5. Boil the Dumplings:
Place the wrapped dumplings in a large pot, cover with enough water, bring to a boil, then reduce to a simmer and cook for about 2.5 to 3 hours, adding water as needed to keep them submerged.

6. Cool and Serve:
Once cooked, remove the dumplings, drain, and let them cool slightly before serving. The sticky rice is soft, and the raisins add a delightful natural sweetness, making this a perfect light and healthy vegan treat.
