香菜炒千张
简介:
这是一道清香爽口的素食快炒料理,千张吸收酱汁,搭配香菜的独特香气,口感柔韧又清新,是一道简单健康的素食佳肴。
材料:
千张(豆腐皮) 200克(切细条)
香菜 50克(切段)
红椒 50克(切丝,可选)
生抽 1汤匙
香醋 1茶匙(可选)
盐 1/2茶匙
白胡椒粉 适量(可选)
植物油 1汤匙
清水 2汤匙
做法:
1. 准备食材:
千张切细条,香菜洗净切段,红椒切丝备用。
2. 焯水千张(可选):
锅中烧开水,放入千张焯水10秒,捞出沥干,以去除豆腥味并使口感更柔嫩。
3. 加热炒锅:
锅中倒入植物油,加热后放入千张,中火翻炒30秒。
4. 加入配料:
加入红椒丝翻炒10秒,再加入香菜段,快速翻拌均匀。
5. 调味入味:
倒入生抽、香醋(可选)、盐、白胡椒粉(可选),翻炒均匀,使千张充分吸收调味料。
6. 加水焖炒:
倒入2汤匙清水,小火焖30秒,使千张更加入味。
7. 装盘享用:
关火后盛入盘中,即可食用,香气扑鼻,口感鲜嫩有嚼劲。

Stir-Fried Tofu Sheets with Cilantro

Ingredients:
Tofu sheets (Qianzhang) 200g (cut into thin strips)
Cilantro 50g (chopped)
Red bell pepper 50g (sliced, optional)
Light soy sauce 1 tablespoon
Aged vinegar 1 teaspoon (optional)
Salt 1/2 teaspoon
White pepper powder to taste (optional)
Vegetable oil 1 tablespoon
Water 2 tablespoons
Instructions:
1. Prepare Ingredients:
Cut the tofu sheets into thin strips, chop the cilantro, and slice the red bell pepper.
2. Blanch the Tofu Sheets (Optional):
Bring water to a boil, blanch the tofu sheets for 10 seconds, then drain. This helps remove any beany taste and softens the texture.
3. Heat the Pan:
Add vegetable oil to a pan and heat over medium heat. Add the tofu strips and stir-fry for 30 seconds.
4. Add Vegetables:
Add red bell pepper (if using) and stir-fry for another 10 seconds, then toss in the cilantro and mix well.
5. Season the Dish:
Pour in light soy sauce, aged vinegar (optional), salt, and white pepper powder (optional). Stir-fry evenly to let the tofu sheets absorb the flavors.
6. Simmer for Flavor:
Add 2 tablespoons of water, cover, and let it simmer on low heat for 30 seconds to enhance the taste.
7. Serve and Enjoy:
Transfer to a plate and serve immediately. The dish is aromatic, tender, and full of umami.
