红烧茄子

简介:

红烧茄子是一道色泽红亮、软糯入味的经典素食家常菜,酱香浓郁,非常下饭。

材料:

茄子 300克(切条或块)

青椒 半个(切块,可选)

红椒 半个(切块,可选)

生姜 3片(切丝)

生抽 1汤匙

老抽 1茶匙

素蚝油 1汤匙

盐 适量

白胡椒粉 少许

清水 150毫升

植物油 适量

做法:

1. 处理茄子:

茄子切好后可用少量盐水浸泡5分钟,挤干水分备用。

2. 炒香姜丝:

锅中倒入植物油,加热后放入姜丝炒香。

3. 翻炒茄子:

加入茄子,中火翻炒至表面微软、略微吸油。

4. 调味上色:

加入生抽、老抽和素蚝油,翻炒使茄子均匀上色。

5.加水焖煮:

倒入清水,盖锅盖小火焖煮8–10分钟,使茄子软糯入味。

6. 收汁出锅:

加入盐和白胡椒粉调味,放入青红椒翻炒收汁,关火装盘。

Braised Eggplant

Summary:

Braised eggplant is a classic vegetarian comfort dish with a rich savory sauce and tender texture, perfect to enjoy with rice.

Ingredients:

Eggplant 300g (cut into strips or chunks)

Green bell pepper half (chunked, optional)

Red bell pepper half (chunked, optional)

Ginger 3 slices (shredded)

Soy sauce 1 tablespoon

Dark soy sauce 1 teaspoon

Vegetarian oyster sauce 1 tablespoon

Salt to taste

White pepper powder a pinch

Water 150ml

Vegetable oil appropriate amount

Instructions:

1. Prepare the Eggplant:

Cut the eggplant and soak briefly in lightly salted water for 5 minutes, then squeeze dry.

2. Sauté the Ginger:

Heat vegetable oil in a pan and stir-fry the shredded ginger until fragrant.

3. Cook the Eggplant:

Add the eggplant and stir-fry over medium heat until softened and lightly coated with oil.

4. Season and Color:

Add soy sauce, dark soy sauce, and vegetarian oyster sauce. Stir well to coat evenly.

5. Simmer with Water:

Pour in water, cover, and simmer over low heat for 8–10 minutes until tender.

6. Reduce and Serve:

Season with salt and white pepper, add bell peppers if using, stir-fry to reduce the sauce, then serve hot.
