红烧腐竹

简介:

红烧腐竹是一道酱香浓郁、口感软韧的经典素食家常菜,简单入味又富含植物蛋白。

材料:

腐竹 120克(提前泡发切段)

胡萝卜 半根(切片,可选)

青椒 半个(切块,可选)

生姜 3片(切丝)

生抽 1汤匙

老抽 1茶匙

素蚝油 1汤匙

盐 适量

白胡椒粉 少许

清水 200毫升

植物油 适量

做法:

1. 准备食材:

腐竹提前泡软后切段,胡萝卜和青椒切好,姜切丝备用。

2. 炒香姜丝:

锅中倒入植物油,加入姜丝小火炒出香味。

3. 翻炒腐竹:

加入腐竹中火翻炒1–2分钟,使其略微吸油。

4. 调味上色:

加入生抽、老抽和素蚝油翻炒均匀。

5. 加水焖煮:

倒入清水,小火焖煮8分钟,让腐竹充分入味。

6. 收汁出锅:

加入盐和白胡椒粉调味,放入青椒翻炒收汁,关火装盘即可。

Braised Dried Tofu Sticks

Summary:

Braised dried tofu sticks is a savory and tender vegetarian dish rich in plant protein, featuring a flavorful soy-based sauce.

Ingredients:

Dried tofu sticks 120g (soaked and cut into sections)

Carrot half (sliced, optional)

Green bell pepper half (chunked, optional)

Ginger 3 slices (shredded)

Soy sauce 1 tablespoon

Dark soy sauce 1 teaspoon

Vegetarian oyster sauce 1 tablespoon

Salt to taste

White pepper powder a pinch

Water 200ml

Vegetable oil appropriate amount

Instructions:

1. Prepare the Ingredients:

Soak the dried tofu sticks until soft, then cut into sections. Slice the carrot and bell pepper, and shred the ginger.

2. Sauté the Ginger:

Heat vegetable oil in a pan and stir-fry the shredded ginger until fragrant.

3. Stir-Fry the Tofu Sticks:

Add the tofu sticks and stir-fry over medium heat for 1–2 minutes.

4. Season and Color:

Add soy sauce, dark soy sauce, and vegetarian oyster sauce. Stir well to coat evenly.

5. Simmer with Water:

Pour in water and simmer over low heat for about 8 minutes until flavorful.

6. Serve and Enjoy:

Season with salt and white pepper, add bell pepper if using, reduce the sauce slightly, then serve hot.
