滋味小炒

简介:

这是一道色香味俱全的素食快炒,结合多种蔬菜,搭配简单调味,口感丰富、鲜美入味,适合搭配米饭或单独享用。

材料:

杏鲍菇 100克(切片)

豆腐干 100克(切条)

胡萝卜 50克(切丝)

西兰花 100克(切小朵)

红甜椒 50克(切片,可选)

生姜粉 1/2茶匙(可选)

盐 1/2茶匙

生抽 1汤匙

素蚝油 1汤匙(可选)

白胡椒粉 适量(可选)

五香粉 1/2茶匙(可选)

植物油 1.5汤匙

清水 2汤匙

做法:

1. 准备食材:
杏鲍菇切片,豆腐干切条,胡萝卜切丝,西兰花掰成小朵,红甜椒切片备用。

2. 焯水西兰花(可选):
锅中烧开水,加入少许盐,放入西兰花焯水20秒后捞出过凉水,以保持颜色翠绿和脆嫩口感。

3. 加热炒锅:
锅中倒入植物油,中火加热,加入生姜粉(可选),稍微翻炒出香味。

4. 翻炒豆腐干和杏鲍菇:
倒入豆腐干和杏鲍菇,中火翻炒2分钟至微微金黄。

5. 加入其他蔬菜:
加入胡萝卜、西兰花、红甜椒,继续翻炒1分钟,使所有食材均匀受热。

6. 调味入味:
加入盐、生抽、素蚝油(可选)、五香粉(可选)、白胡椒粉(可选),翻炒均匀后倒入2汤匙清水,小火焖煮1分钟,使食材更入味。

7. 装盘享用:
关火后盛入盘中,即可食用,色彩鲜艳,口感丰富,滋味十足。

Flavorful Mixed Vegetable Stir-Fry

Summary:

This is a vibrant and delicious vegan stir-fry combining various vegetables with a simple seasoning blend, making it a flavorful dish that pairs well with rice or stands alone.

Ingredients:

King oyster mushrooms 100g (sliced)

Firm tofu (dried tofu strips) 100g (cut into strips)

Carrot 50g (julienned)

Broccoli 100g (cut into small florets)

Red bell pepper 50g (sliced, optional)

Ginger powder 1/2 teaspoon (optional)

Salt 1/2 teaspoon

Light soy sauce 1 tablespoon

Vegetarian oyster sauce 1 tablespoon (optional)

White pepper powder to taste (optional)

Five-spice powder 1/2 teaspoon (optional)

Vegetable oil 1.5 tablespoons

Water 2 tablespoons

Instructions:

1. Prepare Ingredients:
Slice the king oyster mushrooms, cut the tofu into strips, julienne the carrot, separate the broccoli into small florets, and slice the red bell pepper.

2. Blanch the Broccoli (Optional):
Bring a pot of water to a boil, add a pinch of salt, and blanch the broccoli for 20 seconds. Drain and rinse with cold water to retain its green color and crisp texture.

3. Heat the Pan:
Add vegetable oil to a pan over medium heat. Stir in ginger powder (optional) and sauté briefly for aroma.

4. Stir-Fry Tofu and Mushrooms:
Add the tofu strips and king oyster mushrooms, stir-frying for 2 minutes until slightly golden.

5. Add the Other Vegetables:
Toss in the carrot, broccoli, and red bell pepper, and stir-fry for another minute to evenly heat all ingredients.

6. Season the Dish:
Add salt, light soy sauce, vegetarian oyster sauce (optional), five-spice powder (optional), and white pepper powder (optional). Pour in 2 tablespoons of water and let it simmer on low heat for 1 minute to blend the flavors.

7. Serve and Enjoy:
Transfer to a serving plate and enjoy immediately. The dish is colorful, full of textures, and bursting with flavors.
