干煸豆角

简介:

干煸豆角是一道外干内嫩、香辣开胃的经典素食小炒,通过干煸手法提升豆角的香气与口感。

材料:

四季豆 300克(去筋掰段)

干红辣椒 4个(剪段,可选)

生姜 3片(切丝)

花椒 1茶匙(可选)

生抽 1汤匙

盐 适量

白胡椒粉 少许

植物油 适量

做法:

1. 准备食材:

四季豆去筋洗净掰段,沥干水分,姜切丝,干辣椒剪段备用。

2. 干煸豆角:

锅中倒入较多植物油,中火将四季豆煸炒至表面起皱、略微焦香后捞出控油。

3. 炒香配料:

锅中留少量底油,加入花椒、干辣椒和姜丝,小火炒出香味。

4. 回锅翻炒:

将煸好的豆角重新倒入锅中,大火翻炒均匀。

5. 调味入味:

加入生抽、盐和白胡椒粉,继续翻炒使其均匀入味。

6. 出锅装盘:

炒至干香浓郁即可关火,盛出享用。

Dry-Fried Green Beans

Summary:

Dry-fried green beans are a flavorful and slightly spicy vegetarian dish with a wrinkled texture and rich aroma.

Ingredients:

Green beans 300g (trimmed and cut into segments)

Dried red chilies 4 (cut into pieces, optional)

Ginger 3 slices (shredded)

Sichuan peppercorns 1 teaspoon (optional)

Soy sauce 1 tablespoon

Salt to taste

White pepper powder a pinch

Vegetable oil appropriate amount

Instructions:

1. Prepare the Ingredients:

Trim and wash the green beans, then cut into segments and dry well. Shred the ginger and cut the dried chilies.

2. Dry-Fry the Beans:

Heat a generous amount of oil in a pan. Fry the green beans over medium heat until wrinkled and slightly browned, then remove and drain.

3. Sauté the Aromatics:

Leave a small amount of oil in the pan. Add Sichuan peppercorns, dried chilies, and ginger, stir-frying until fragrant.

4. Return the Beans:

Add the fried green beans back into the pan and stir well over high heat.

5. Season the Dish:

Add soy sauce, salt, and white pepper powder. Stir-fry evenly to coat.

6. Serve and Enjoy:

Cook until aromatic and slightly dry, then remove from heat and serve hot.
