素包子
简介:
素包子是一道清香松软、馅料丰富的传统素食主食,口感柔软又营养均衡,适合日常餐食。
材料:
中筋面粉 300克
酵母 3克
温水 160毫升
白糖 1茶匙(发酵用)
香菇 4朵(泡发切丁)
胡萝卜 半根(切丁)
卷心菜 150克(切碎)
粉丝 50克(泡软切段)
生姜 3片(切末)
生抽 1汤匙
盐 适量
白胡椒粉 少许
香油 几滴(可选)
植物油 适量
做法:
1. 和面发酵:
将面粉、酵母和白糖混合,加入温水揉成光滑面团,盖上静置发酵至两倍大。
2. 准备馅料:
香菇、胡萝卜、卷心菜和粉丝切好备用。
3. 炒制馅料:
锅中加入植物油,放入姜末炒香,加入所有蔬菜翻炒至略微软化,加入生抽、盐和白胡椒粉调味,放凉备用。
4. 分剂擀皮:
发好的面团排气后分成小剂子,擀成中间厚边缘薄的包子皮。
5. 包制包子:
放入适量馅料,捏褶收口,静置二次醒发约15分钟。
6. 蒸制完成:
冷水上锅,大火蒸12–15分钟,关火焖3分钟后取出即可。

Vegetarian Steamed Buns
Summary:
Vegetarian steamed buns are soft and fluffy plant-based buns filled with savory vegetables, making a comforting and balanced meal.
Ingredients:
All-purpose flour 300g
Yeast 3g
Warm water 160ml
Sugar 1 teaspoon (for fermentation)
Shiitake mushrooms 4 (soaked and diced)
Carrot half (diced)
Cabbage 150g (chopped)
Glass noodles 50g (soaked and cut)
Ginger 3 slices (minced)
Soy sauce 1 tablespoon
Salt to taste
White pepper powder a pinch
Sesame oil a few drops (optional)
Vegetable oil appropriate amount
Instructions:
1. Make and Proof the Dough:
Mix flour, yeast, and sugar. Add warm water and knead into a smooth dough. Cover and let rise until doubled in size.
2. Prepare the Filling:
Dice the mushrooms and carrot, chop the cabbage, and cut the soaked glass noodles.
3. Cook the Filling:
Heat vegetable oil in a pan, sauté minced ginger, then add all vegetables. Stir-fry until softened and season with soy sauce, salt, and white pepper. Let cool.
4. Shape the Wrappers:
Punch down the dough, divide into portions, and roll into round wrappers thicker in the center.
5. Wrap the Buns:
Place filling in the center, fold and seal. Let rest for about 15 minutes for a second proof.
6. Steam the Buns:
Place in a steamer with cold water. Steam over high heat for 12–15 minutes, then rest covered for 3 minutes before serving.
