Mung Bean and Pumpkin Porridge

Summary:

Mung bean and pumpkin porridge is a sweet and nutritious vegetarian dish that helps cool the body and nourish the digestive system.

Ingredients:

Mung beans 100g

Pumpkin 200g (peeled and diced)

Rice 50g

Water 1000ml

Rock sugar to taste (optional)

Instructions:

1. Soak the Mung Beans:

Rinse the mung beans thoroughly and soak them for two hours to soften them for cooking.

2. Cook the Mung Beans:

In a pot, add water and the soaked mung beans. Bring to a boil, then simmer over low heat for 20 minutes until they start to break open.

3. Add the Rice:

Add the washed rice and continue to simmer for another 15 minutes, stirring occasionally to prevent sticking.

4. Add the Pumpkin:

Add the diced pumpkin and cook for another 15 minutes until the pumpkin softens and blends into the porridge.

5. Adjust Sweetness:

Add rock sugar to taste and stir well. Cook until the porridge reaches a thick and smooth consistency, then turn off the heat.

6. Serve and Enjoy:

Ladle into bowls and let it cool slightly before serving. This porridge is perfect for breakfast or a light dinner.
