Walnut and Yam Stew

Summary:

Walnut and yam stew is a nourishing vegetarian soup that combines the rich aroma of walnuts with the soft texture of yams, offering great benefits for digestion and energy.

Ingredients:

Yam 300g (peeled and cubed)

Walnuts 50g

Red dates 5 (pitted)

Goji berries appropriate amount

Water 800ml

Salt to taste (optional)

Instructions:

1. Prepare the Ingredients:

Peel and cut the yam into cubes, slightly crush the walnuts, and pit the red dates.

2. Boil the Soup Base:

In a pot, add water and red dates. Bring to a boil over high heat.

3. Simmer the Yam:

Add the yam cubes, reduce to medium-low heat, and simmer for 20 minutes until softened.

4. Add the Walnuts:

Stir in the walnuts and continue simmering for another 10 minutes to enhance the flavor.

5. Add the Goji Berries:

Finally, add the goji berries and cook for another 2 minutes to release their natural sweetness.

6. Season and Serve:

Adjust with a small amount of salt if desired. Serve hot and enjoy.
